Through the centuries for the people of Eastern
Europe the main source of animal protein was bacon. Bacon provided
a concentrated source of protein and energy, it would keep without
refrigeration and it could be easily carried in one’s pack: A vital
fact for the shepherds, horsemen and woodsmen of this region living
out in the open for eight month out of the year.
Therefore it is not too surprising that a special
knife was developed for cutting bacon: The Rasher or Bacon Cleaver.
The Rasher’s long thin blade and razor edge could glide through
the toughest, oldest slabs without effort. The light weight of the
knife gave precise control. All these features assured that the
cut portions were exact and the rash of bacon would last throughout
the year.
In the West, the unique ability of this knife’s
design to deliver precise cuts made it a favorite with the medical
profession . They became known as Surgeon’s Knives. Versions of
the design were also widely used in America during the Civil War
and in the untamed West.
Their humble origins and gory history belie the

to filet the most delicate mountain trout. In the forests of Europe,

We asked Master Polyak to make these very special
folding knives as a set of three sizes to give you the flexibility

a great tool is also a work of art, each of the handles are as beautiful
as they are different.

home. So we went to our master woodworker and asked him for something
wonderful. The result is solid walnut case weighing almost a half
a pound (220 gr) that by itself is a pleasure to hold. In addition,
the optional engraved brass plaque provides the opportunity to make
